Ingredients: 1 kg (2.2 lbs.) of large prawns 200 ml (7 fl. oz) of white wine 50 g (1.8 oz) of unsalted butter 1 tablespoon of lemon juice 1 teaspoon of Dijon mustard 1 shallot, finely chopped chopped parsley for garnish

Butter Sauce: 100 ml (3.4 fl. oz) of white wine 50 g (1.8 oz) of unsalted butter 1 tablespoon of lemon juice 1 teaspoon of Dijon mustard 1 shallot, finely chopped Salt and pepper to taste

Instructions:

  1. Clean the prawns, discarding the heads and shells. Devein them by making a shallow incision down the back and removing the black intestinal cord with a sharp knife.
