250 ml milk

250 ml beer or sparkling wine

125 ml olive oil, for frying

For the butter sauce:

75 g butter, at room temperature 3 garlic cloves, finely minced or grated on a microplane grater 2 tbsp lemon juice, freshly squeezed (about 1 lemon)1 cup (240 ml) chicken stock or broth (homemade* or store-bought)1 tsp cornstarch dissolved in 2 tbsp cold waterSalt and pepper to tasteExtra virgin olive oil for drizzling over finished dishParsley leaves for garnish (optional)

Serves 4-6 as an appetizer or 2-3 as a main course.

I recommend doubling the recipe if you want to serve more than 3 people!

Instructions:

To make the butter sauce: In a small saucepan over medium heat, melt the butter. Add the garlic and sauté until light golden brown and fragrant. Pour in the lemon juice and chicken stock/broth. Raise the heat and bring to a boil. Season with salt and pepper to taste. Give the cornstarch mixture a stir and add it to the boiling sauce. Simmer for 2-3 minutes until thickened. Keep warm until ready to use. To prepare the prawns: Combine the flour, salt and black pepper in a shallow bowl or plate. In another shallow bowl or plate, combine the milk and beer/sparkling wine. Place each prawn into the flour mixture first, making sure to coat evenly all over. Then dip into the milk mixture ensuring they are well coated. Place on a wire rack set over a baking sheet while you finish coating the rest of the prawns (you may need to use two racks if they don't all fit). Heat olive oil in a large heavy skillet over medium-high heat until hot but not smoking . Working in batches so as not not overcrowd the pan, place the prawns in the skillet and cook until golden brown and cooked through, about 2 minutes per side* . Serve immediately with some of the butter sauce poured over top along with some nice fresh parsley leaves if you have them! Enjoy!
